Hummus

Goats Cheese

Spinach

Mushrooms


Bocconcini Cheese Pearls...mmm

Vegetable spread on outside of both sides

Cook on medium heat for 2-5 minutes on each side until cheese is melted.


Enjoy! Mmm.... think I may go make another now!

The Pursuit of Healty Ness

Lunch:

I don't know if you've noticed, but I'm kind of obsessed with spinach. I eat it pretty for every meal. Spinach is by far my favourite vegetable. I also can't get enough SPOUTS! Of all kinds! Mmmm! Both of those are present in today's salad. As well as mushrooms, cucumber, tomato, avocado, and soft tofu. I had my favourite dressing- homemade balsamic vinaigrette with Cajun spices.
It was divine! I honestly prefer to eat fresh vegetables all of the time. Sure veggies are SO healthy, and do amazing things for your body, but I just like how delicious they are! But my favourite food of all time is cheese. Which came in the cottage variety today. :)

Yum! Looking at this makes me want seconds!

Spinach and Swiss omelet, with hot sauce, and leftover homemade salsa and creme fraiche from veggie quesadilla. Also with a side of whole wheat toast, large glass of water, and coffee in my awesome Trueblood mug.



Tasty! Although I couldn't finish it all.

Lunch:

Left over lentil soup with spinach, a whole avocado and cheese with balsamic vinegar, Cajun spices, and olive oil. Plus big jug o' water.

This is why it's the PURSUIT of healthiness... I have a sweet tooth. I walked to Blockbuster late last night and came back with a jumbo box of Nerds. After eating them I felt so sick though... but I just HAD to have some sugar. LOL

The Pursuit of Healtiness

My Dinner. Spinach salad with sprouts Combo Pack, marble cheese, hard boiled eggs and BBQ chicken (not shown). 

I was kind of hyper today.... can you tell? Lol. I just had a fabulous day and was feeling great. Note: my sweet apron. I have a collection of 4 sweet aprons to be exact. Always on the look out for more.

Eggs. I eat them almost every single day.

This is my Moksha Yoga water jar. I try to drink 3 of these a day. I drink water with ice and a half a lemon and a pinch of sea salt. Since I do so much hot yoga, I need electrolytes in my water to fully hydrate after a hard core, 90 minute Powerflow session. It also makes it takes even more refreshing :)

I love salad. Isn't it just divine? SO pretty! Don't get me wrong... I also love junk food. But I try to eat organically as much as possible to counteract my sugar binges. Especially chocolate and Real Fruit Popsicles. My fiance and I go through a box of Popsicles a day easy. There's zero fat and they indulge my sweet tooth :)
